Sweet potato soup

Tonight I tried Nava Atlas's recipe, Mellow Sweet Potato Soup (p. 26). I have to say, this is really my kind of soup. It's sweet and flavorful, and a beautiful color, and half-puréed so that it's creamy and chunky at the same time. Mmm, perfect.

I followed the recipe exactly, except using soy milk in place of rice milk. This is a nice soup for fall, and especially if you like sweet potatoes, I would recommend trying this one out! Preparation was pretty simple too, and even more so since I had an extra set of hands helping me chop.

Your soup looks beautiful! I have had success with 3 out of 3 of the soups from Nava's book so far.

I meant to tell you earlier how glad I am things went well for you at your family weekend. I'm sure you handled the situation perfectly. Now you can look forward to your next visit with them with no nervousness!

I have sweet potatoes...I'm just too tired to peel them and chop them. I need some helpers!

that book keeps popping up and making me hungry! not to mention it also makes me realize that it's one i really need to get...especially now that it's finally feeling like soup season here! ;)

Love the blender soups too. How are you finding that cook book? It's the Nava Atlas soup and stews one right?

sweet potatos are a favorite thing around here.. no matter how they are cooked or incorporated.. I find many many ways to use them.. looks like I will just have to try this soup for myself..
