See what I came home to today?
Black Bean, Mushroom, and Quinoa-Stuffed Peppers from Vegan With a Vengeance, prepared by none other than Chef Bob. He came to pick me up from the train station after work, and when I got in the car I said, "It smells like food in here."
Bob said, "Does it smell like chili powder?"
"Chili powder? Should it smell like chili powder in here?"
"Well, I got chili powder all over my hands while I was making dinner."
Making dinner? How sweet is that? Oh, and by the way... this recipe is delicious, and surprisingly not too heavy for a later meal. Black beans, quinoa, and mushrooms all together in one dish can't go wrong.
I've been taking salads for lunch to work just about every day. But I know what I'm taking tomorrow--Bob had the foresight to make enough for leftovers! Yay!

Hi! It has been so long since I have been able to be aroung blog world much. I am in a position in which I teach health and nutrition to 230 kids each semester = 460 by the end of the year. I love what I do yet as with any new job done for the first time it is time consuming. I finally came to a place in my new work life this week in which I was able to cook for myself every day instead of take out and baked potato/ salads.
The stuffed erd peppers from VWAV looks great. I made red pepper sauce (to top pasta with) from Dreen'a EV cookbook this week. I have been hankering stuffed peppers though since they are so cheap right now in my area.

I love this recipe too. It is defnitely delicious. In the summer I make them on the BBQ. You are a lucky girl to have Bob make dinner!
